fix: replace dead mpich.org link with Wikipedia reference in docs

What does this PR do?

Fixes #<issue_number>

mpich.org is currently inaccessible (returns 403), causing linkcheck CI to fail. Replaced with the Wikipedia page for MPICH which is stable and equally informative.
