This makes it a lot more predictable and actually populates e.g. the transform functions. Now `dest` is the way you specify the destination ellipsoid but all computation uses `ax.ellipsoid` as the source of truth. This also adds some camera handling and makes `reset_limits!` do something sensible.
This will have to be refactored when update_cam! becomes the low level interface but for now it's OK
