+There are a few reasons combined to explain not having a big fancy GUI on MiSTer. First, MiSTer's menu is designed to take up a very limited amount of space on the FPGA and use the least amount of resources on the ARM processor side. Second, the DE10-Nano has no graphics processor, so a fancy GUI will be rendered slowly in software by the CPU unless it is rendered on the FPGA side. Finally, the MiSTer menu has to fit on a wide variety of very low resolution analog displays and still be useful.
