Adds a `virtual` option on categories and a per-admin "disaggregate virtual periods" preference that splits attendance stats (dashboard, Activity tab, nightly email) into virtual vs. non-virtual breakdowns so kiosk-driven in-person activity isn't blended with remote/virtual participation in reporting.
