fix: detect and change to project root in notebook

- Fix path detection when notebook is opened from notebooks/setup/
- Automatically change working directory to project root
- Ensures .env.example and other root files are found correctly
- Works whether notebook is opened from project root or notebooks/setup/
- Fixes issue where Step 6 couldn't find .env.example
