Add "custom unit" option to the databrowser metadata editor, allowing users to pick a specific target unit independent of the active preset
Server-side: handle category: "custom" in validation, resolution, and WebSocket delta delivery
Also fix the meta store to merge rather than replace, preventing displayUnits from being wiped on delta updates
