Removed 'Listings' from the main navigation and commented out the tools section (GitHub logo/repo, because it appears in multiple places througout). Added the 'Catalogue' entry (Listings) with an icon to the sidebar.
Updated the page title from 'Listings page' to 'Catalogue'.

This pull request introduces a new catalogue page for browsing guides, updates navigation to include this page, and makes minor improvements to category naming and organization. The main changes are the addition of
listings.qmd, updates to the Quarto configuration to render and link this page, and cleanup of outdated files.Catalogue page addition:
