This PR adds configuration support for the Base Sepolia and Ethereum Sepolia test networks in the Uniswap V2 Subgraph.
Summary of changes:
Added base-sepolia and sepolia network entries to the subgraph configuration.
Updated corresponding subgraph.yaml files with network mappings.
Adjusted deployment scripts and environment setup for compatibility.
Verified deployment using The Graph testnet endpoints.
Purpose:
To enable developers to index and test Uniswap V2 deployments on Base Sepolia and Ethereum Sepolia for smoother local and testnet development workflows.
