Add explicit contact info for ENF email parser

Hi team, I’ve confirmed the markdown file includes all required metadata and the correctly formatted fields contact email, project name etc. as per the parser. However the send-the-email github action still fails with Input required and not supplied: to. It may be an internal issue with the email action or a missing secret. Please let me know if any further action is needed from my side. Thank you kindly |

Hi EOS Network Foundation team,
This is my application for a grant to support the development of EOSAI – a lightweight framework for deploying decentralized AI agents on EOS. These agents interact with smart contracts to automate DeFi, NFT, and governance tasks.
