docs: update wyre-technology org refs to WYRE-AI - #227

Repo moved from wyre-technology to WYRE-AI on 2026-08-27. Updates live clone URLs, marketplace install commands, and vendor connector repo links across the connector READMEs and root docs — the still-unmoved @wyre-technology npm package scope and dated PRD drafts are intentionally left untouched. Repo-wide bump gate (scripts/check-marketplace-drift.mjs) requires a plugin.json version bump whenever any file under a plugin's directory changes. Patch-bumps the 58 plugins whose README/GOVERNANCE files were touched by the wyre-technology -> WYRE-AI org reference update. Authored-by: scribe <scribe@wyre-internal>
