Just like with JANSSON_INSTALL_CMAKE_DIR and JANSSON_INSTALL_LIB_DIR make the pkg-config installation path configurable.

Just like with JANSSON_INSTALL_CMAKE_DIR and JANSSON_INSTALL_LIB_DIR make the pkg-config installation path configurable.
note: maybe it would be a good idea to use https://cmake.org/cmake/help/latest/module/GNUInstallDirs.html for all install locations instead.
