Added darwin-arm64 reference for the bundled postgres database to allow for Apple silicon support.
Bumped postgres version to 11.15 as 10.18 does not have an apple silicon build and 10.20 causes segmentation faults.
Note - I noticed older builds shipped with a newer version of postgres, might be worth reviewing. Also the optional versions (such as this apple one) do not have a build for every version number so worth verifying if its bumped higher.
