The README dashboard list had drifted from the dashboards/ directory. Add the missing dashboards (AWS, AWS CloudWatch Metric Streams, AWS Firehose, AWS Lambda, AWS Route53, Kubernetes, MongoDB via Vector, and Process Memory), sort the list alphabetically, and fix the broken PostgreSQL link (/dashboards/postgresql/ -> /dashboards/postgres/).

The README's dashboard list had drifted from the actual
dashboards/directory. This brings it back in sync.dashboards/but were missing from the README:/dashboards/postgresql/→/dashboards/postgres/).Every link in the list now resolves to a real directory under
dashboards/, and every directory is now documented.Test plan
