feat: Version upgrade for EMR / Flink and adding autoscaler example

• Upgrade all terraform modules / helm charts to latest version
• Upgrade cluster and karpenter to latest version
• Upgrade EMR to 7.9
• Add example for Autoscaler job
• Fix a few issues in other examples and documentation

Motivation

Current blueprint stopped working as the modules are obsolete.
