The containerd configuration for SOCI integration with k8s is slightly different for containerd 2.0+ integrations.
Description of changes:
This change updates the documentation with the containerd 2.0+ configuration needed to integrate with SOCI.
Testing performed:
Pulled image with both containerd 2.0 and 2.1 using crictl.
