Updating to uniffi https://github.com/mozilla/uniffi-rs/releases/tag/v0.28.2

Notes to the reviewers

We have to update bitcoin-ffi first, so I'm using my fork branch bitcoindevkit/bitcoin-ffi#28 until that gets merged.

Testing out some of https://mozilla.github.io/uniffi-rs/next/swift/uniffi-bindgen-swift.html

Which is only available in 0.28.2 mozilla/uniffi-rs#2248 (comment)

In my initial exploration nothing that was immediately needed, so there's no big rush, but more exploration to be done potentially
