chore: upgrade dependency minor releases

This PR upgrades all project dependencies to their latest minor versions within the prod and dev scopes, avoiding bumping the peerDependencies minimum requirements, as this is a breaking change best practice recommendation. Test suites have been ran via yarn validate to ensure changes are stable.
