fix: update component page to highlight extraConfiguration

Description

This pull request significantly improves the documentation for configuring Camunda components in Helm charts. The main focus is to clarify the difference between extraConfiguration and configuration, recommend safer practices, and provide practical guidance for users. The changes prioritize safer, upgrade-friendly configuration methods and reorganize the document for clarity.

P.s. it links to the component section for component configuration, but as there is no .md file yet for the overview, it links in a first iteration to the Orchestration cluster.
