docs: document Zeebe exporter index replicas in 8.8 to 8.9 Helm upgrade guide

Description

Documents a configuration change in the 8.8 → 8.9 Helm upgrade guide: orchestration.index.replicas no longer sets the legacy Zeebe Elasticsearch/OpenSearch exporter (zeebe-record-*) index replica count. The new orchestration.exporters.zeebe.replicas covers it and defaults to orchestration.index.replicas, so no change is required to keep the previous behavior.

Pairs with the chart fix camunda/camunda-platform-helm#6431 (issue camunda/camunda-platform-helm#6430). Applied to both /docs and /versioned_docs/version-8.9.
