Bump jsoup

• Waiting on .attr("name") on DocumentType returns empty string since 1.18.2 jhy/jsoup#2241 to be resolved

I also tested this branch locally with babashka and everything seems to work, which confirms that this upgrade also works with GraalVM native-image:
