[Workers] Fix observability documentation links

Summary

Corrects outdated Workers observability links so readers reach the current canonical documentation without relying on redirects.

• Updates the Console API links to current Logs, real-time logs, Tail Workers, Workers Trace Events, and Logpush destinations.
• Corrects the Source maps related-resource link so Tail Workers points to the Tail Workers page.
