chore: remove origin attribute from ProgramNode

Removes the origin property that whitelisted only 'anchor' and 'shank' sources
allowing any tool in the ecosystem to generate Codama nodes.

Hey sorry I should have labelled the original issue as v2 because, whilst this is probably not used much, it is technically removing information from the standard and is therefore a breaking change.
