CMake version 4.0.0 changed their license file name from Copyright.txt to LICENSE.rst. Fix for issue conan-io#27330.

Thanks, this is in fact an error that was popping up with the rc releases (In fact https://github.com/conan-io/conan-center-index/pull/27227/checks?check_run_id=40527504877 has a hook warning us about this)
