The most recent version of datafusion brings several fixes to the unparse of logical plans, which affect datafusion-table-providers when optimizing plans with datafusion-federation, such as apache/datafusion#15693 and apache/datafusion#15212.

The only thing missing for this PR to work is updating the arrow version in the duckdb-rs crate (there is already an open PR: duckdb/duckdb-rs#496).

@chenquan duckdb-rs already upgrade to arrow-rs 55, but still has not released a new version. There is a ticket open to release the next version: duckdb/duckdb-rs#505

duckdb-rs has been updated to 1.3.0. @phillipleblanc are there any plans to update the spiceai_duckdb_fork crate?
