This PR fixes the Renovate configuration for tracking AWS Lambda layer versions by updating the custom datasource format from html to plain and adjusting the transformation templates to correctly parse version information from AWS documentation pages.
Changes:
- Changed datasource format from
htmltoplainfor all four custom datasources (AppConfig extensions and Lambda Insights extensions for both x86_64 and ARM64) - Updated transform templates to use the new plain format syntax with proper JSONata expressions
- Hardcoded region and account ID in matchStrings patterns instead of using regex capture groups

Finally found working configuration for parsing html page without links (plain type worked).
Tested by temporarily changing default branch from main to PR branch.
