Fix LiveKit compilation errors by updating delegate method signatures and pinning the dependency, and add a dependency review workflow.
The LiveKit iOS library introduced breaking changes in a minor release, causing compilation failures. This PR updates the affected
RoomDelegatemethod signatures and pins theclient-sdk-swiftdependency to an exact version (2.8.1) to ensure stability. Additionally, a GitHub Actions dependency review workflow is introduced to proactively identify and prevent similar issues and security vulnerabilities in future dependency updates.
