We're about to change matthewwilkes/esp_idf:5.2.1 to ghcr.io/emfcamp/esp_idf:v5.4.1 in pr200, can you update to this and we'll pull this in after?

Adds some extra guidance on building the badge software on macOS, along with the updated command to get the
docker ... deploycommand to work there.
