Thanks so much for this new tutorial, this is really cool!
I added some suggestions for uniformity and a couple of explanations after noticing that several tools have very similar names on EU, I already applied those changes. Where I was confident, I already applied them. For the others, please take a look and see what works for you.

I think this would be the prime location to mention the tool rerun feature as the sorting is nearly identical to that in the earlier steps. Just as an idea

Maybe add a link to the tutorial that explains how users can create a workflow from their own history?
For the variables to be flexible, the users would need to do reworking to extract the input parameters as you already did in your WF. Maybe that tutorial would also be helpful here:
