feat(core): Add enableTruncation option to LangGraph integration

This PR adds an enableTruncation option to the LangGraph integration that
allows users to disable input message truncation. It defaults to true
to preserve existing behavior.

Also refactors to use the shared getTruncatedJsonString/getJsonString utilities.
