升级 AI 相关 WASM 插件的默认版本从 1.0.0 到 2.0.0。

改动

ai-gateway.sh

AI_PROXY_VERSION: 1.0.0 → 2.0.0
AI_STATISTICS_VERSION: 1.0.0 → 2.0.0
MODEL_ROUTER_VERSION: 1.0.0 → 2.0.0
更新 metadata labels 中的 higress.io/wasm-plugin-version
更新配置文件名 ai-statistics-1.0.0.yaml → ai-statistics-2.0.0.yaml
