Switching to to the Epsilon wasm runtime since it is both small and also fully supports the WASM 2.0 spec. A much better option than wasman! Signed-off-by: deadprogram <[email protected]>

This PR is to add Epsilon as the new default runtime for Mechanoid. 🤖

It also removes support for Wazero, since recent releases have not been able to be compiled with TinyGo for some time.
