SPECS:
- CPU: i5-6300U
- GPU: Intel HD Graphics 520 1536 MB
- RAM: 8GB (but any amount should work just fine)
- SSD: KINGSTON SKC2500M8250G - 250GB
- SMBIOS: MacBook13,1
For wifi, use a compatible dongle and this program by Chris1111: https://github.com/chris1111/Wireless-USB-OC-Big-Sur-Adapter Bluetooth has not been fixed yet.

Copy EFI File to the root of a clean FAT32 formatted USB

Add com.apple.recovery.root to the root of the same USB (i have not changed any BIOS settings, as long as you aren't on RAID disk mode, you should be fine)

Boot from the USB and select "DMG {USB NAME}"

The device should boot directly to the Mac OS recovery with functional Touchpad and Keyboard

Format SSD using Disk Utility (included in Recovery)

Connect Ethernet and press Install Mac OS Sequoia

Your device will reboot a couple of times, it should finish the install automatically when you get to the installing part.
The rest is straighforward!
