Pull Request Overview
This PR changes the default value for the DISABLE_AWS_HARVESTER environment variable from false to true, effectively disabling the AWS harvester by default in the Jitsi Video Bridge configuration. This addresses issue #2008 where the AWS harvester should be opt-in rather than opt-out.
