This commit adds Sentry SDKs and configurations to both the API and web applications. It enables error tracking, performance monitoring, and provides better visibility into application health. Environment variables for Sentry configuration have also been updated in the `.env.example` file. Co-authored-by: joshuawootonn <joshuawootonn@gmail.com>
