Add weekly stats collection workflow and initial dataset

Summary

• Added weekly GitHub Actions workflow to collect JSON Schema ecosystem stats
• Implemented stats fetch script (fetch.js)
• Added initial dataset and weekly_stats.csv structure
• Prevented duplicate daily entries

Why

This enables automated tracking of JSON Schema ecosystem growth over time.

Notes

• Workflow runs weekly via cron
• CSV is append-only with deduplication logic
