This is a last-resort facility in case the rangefinders don't trigger. It allows a judge to a) trigger the servo manually via a push button and b) adds a flag for disabling the use of the sensors altogether. I got a report that the rangefinder would trigger without any item in the fryer but could not investigate it so far. this change is meant to alleviate such a situation.
