A PR to switch things to uv. I've also set back the minimal python version to 3.10 and tests are passing on local. I made the docs look more stable too.
@michealroberts, I know that we talked about it in #36, but is there any way we could allow for python 3.10? Also, could you adapt the containerized tests CI to work with uv? Sorry I lack the skills to maintain this part.
