docs: add strip non essential fields option to SWC plugin doc

Description

As discussed in lingui/swc-plugin#137, we added an option to override the default behavior that strips fields in production builds

Types of changes

• Bugfix (non-breaking change which fixes an issue)
• New feature (non-breaking change which adds functionality)
• Breaking change (fix or feature that would cause existing functionality to not work as expected)
• Documentation update
• Examples update

Checklist
