LGTM on the docs side.
It also looks good on the code side, but I don't know livekit well enough yet to give an approval haha

This makes this template more generic and reusable for future hackathons. I've removed the language that's highly specific to AssemblyAI and Rime (cohosts of the original one we made it for) and also updated to best practices, latest SDK version, and made some other tweaks.
