Beta 3 (b3-latest, b3-200g-latest) is already live on GHCR but undocumented. Adds it with an explicit beta/non-GA warning, matching Spike's confirmed host requirement (Sequoia 15.7.1+ runs the guest, only building from IPSW needs a macOS 27 host).
