This PR addresses #55 by building and testing the action across a matrix of platforms similar to what we do in
setup-matlab.It also bumps all 3rd party actions to the latest version and addresses CodeQL findings:

Our release workflow uses a deprecated version of the output API, but it turns out we weren't using the output anywhere so I removed that part of the workflow.
