Update the maturity status for various mautrix bridges (e.g., Signal, WhatsApp, Slack, Meta (IG/FB), Twitter and Google Messages).

(also i'm slightly confused that mautrix-meta's roadmap claims to support whatsapp when there is mautrix-whatsapp)

Meta's WhatsApp support means the encrypted chats on messenger and instagram, which are on whatsapp (but at some point meta seems to have given up their plans of allowing whatsapp users to talk to messenger users, even though they're all literally going through the same servers with the same protocol)
