docs: reorg protocol docs, new RPC methods

This PR:

• moves EraVM specific protocol information into EraVM folder
• adds new RPC methods from ZKsync OS server
• adds TypeScript examples for all ZKsync OS RPC methods
• adds comments for unimplemented RPC methods
• updates "Upgrades and Migrations" page with v29 and Atlas upgrades

TODO:

• update protocol index page cards
• finish updating api examples
• add atlas to upgrades page
• update redirects
• confirm with protocol team
