This PR updates rasterio from 1.5.0 to 1.5.1.

Documentation:

- Note that PROJ transformation grids and the PROJ_NETWORK environment variable
are required to apply vertical (datum) shifts when reprojecting or
transforming (2929).

Bug fixes:

- rasterio.plot.show: Restore the ``adjust=False`` default so a user-supplied
vmin/vmax/norm is honored for single-band data instead of being rescaled to
0-1 (3549).
