htan-v6.0.0-manuscript

This release updates all BigQuery table references in the repository to use HTAN Data Release 6.0 (r6 / r6_v2) datasets. The updates reflect alignment with the latest validated and published metadata and assay files provided by HTAN Centers.

This release aligns with the HTAN Phase 1 Data Model.
