fix(cowork): sync channel session model override from OpenClaw gateway

Read the effective model from sessions.list rows, channel history model-snapshot/session_status entries, and sessions.patch responses so IM/channel sessions reflect model switches made outside the app instead of diverging from the local modelOverride. Adds a
cowork:session:modelOverrideChanged IPC event so the renderer updates live.
