fix: Adds dashboard for otel docker

• Fix to the docker otel dashboard
• Updates the redirection to the documentation instead of the otel examples

Thanks for the PR! I noticed an issue with the screenshot format:

Screenshot Format Issue:
The file dashboards/docker-otel/docker-otel.webp uses the .webp format, which is not supported. Per our contribution guidelines, dashboard screenshots must be in .png, .jpg, or .jpeg format.

Please convert the screenshot to one of the supported formats (preferably .png) and update the PR.
