[email protected]: Use versioned binary name

Description

Allows versioned variant of gersemi to be installed in parallel to unversioned core version.

Motivation and Context

Prior variant would install the pinned version as a "keg", which means it exists on the system but the binary is not automatically symlinked into Homebrew's bin path and thus is not available in the default path.

How Has This Been Tested?

Formula tested locally to check correct creation of versioned symlink.
