MGMT-19248: Set OPENSHIFT_AI_REQUIRE_GPU to false

Installing the _OpenShift AI_ operator requires at least one supported GPU. The CI environment doesn't have that. To be able to run tests it is necessary to set the `OPENSHIFT_AI_REQURE_GPU` environment variable of assisted service to `false`.
