Add TestTrackingDiagrams to Documentation section

TestTrackingDiagrams — Automatically generates interactive HTML reports with PlantUML sequence diagrams, component diagrams, Activity Diagrams, and timeline visualizations from your component test HTTP traffic and SUT telemetry.

Updated description for TestTrackingDiagrams to include Activity Diagrams and specify component test HTTP traffic and SUT telemetry.
Clarified description of TestTrackingDiagrams in README.
